We will crack open a jar of Bumblee’s Preserves Strawberry Jam to layer on our Scone with a good dollop of clotted  cream. Jam first of course!

Afternoon Tea is a relatively recent tradition, started by Anna, the 7th Duchess of Bedford, in the 1800s. She complained of feeling queasy in the late afternoon and the solution was to take a pot of tea and a light snack of sandwiches, cakes or both.

Afternoon tea grew in popularity when Anna started inviting her friends to join her, the habit caught on and soon it became a quintessential part of British life.

I remember my Grandma always stopping around 4pm and I still have the habit of buying a cake from the bakers in the afternoon. A traditional afternoon tea would consist of sandwiches, scones, cakes and biscuits of many varieties and preferably with scones, clotted cream and strawberry jam. It may be presented on a tiered stand with fine crockery and a pot of tea.

I remember lemon curd sandwiches, pink wafer biscuits and Tunnock’s chocolate teacakes. Nowadays, it might just be a cuppa and a plate of ginger nuts, but the tradition lives on.

Some Guidance on proper Afternoon Tea Etiquette.

  1. Brew loose tea leaves, in a proper teapot
  2. Allow the tea to brew, 3 minutes should be perfect
  3. The person nearest the pot should pour for everyone
  4. Pour the tea first, followed by milk
  5. Stir your tea clockwise, starting at 6 o’clock and finishing at 12
  6. Once you’ve stirred, place your spoon on your saucer
  7. Don’t stick out your little finger, it’s not the done thing
  8. No clinking – Careful not to clink your cup with your spoon
  9. No dunking – We can skip this one!

The perfect scones for your afternoon tea?

An integral part of afternoon tea is your traditional cream tea, served with scones, clotted cream and strawberry jam.

Although the presentation of the cream tea varies depending on location, there seems to be two firm rules: the jam should be strawberry and the cream clotted. Ideally the scone will be freshly baked and very slightly warm.

In Cornwall it is traditional to serve with strawberry jam spread over the scone, then a large dollop of cream on the top, others might like the jam to go on top of the cream. I think it’s down to personal preference and you will find both variations served throughout Devon and Cornwall. In London they use the Cornish way, a former chef of the royal family spoke up on the matter:

“The Queen always had homemade Balmoral jam first,” said the royal families former chef, “with clotted cream on top at Buckingham Palace garden parties in the royal tea tent and all royal tea parties.”

It seems jam on first would be the “proper” Royal way to do it, but this is not a debate we want to stoke, they are tasty afternoon treat however they are presented, especially with a Bumblee’s preserves strawberry jam spooned unsparingly on top!

The perfect cream tea is all about the jam, cream and scone ratios. The general rule seems to be 2 parts scone, 1 part cream and 1 part jam. See fig 1.

A traditional afternoon tea may come with a selection of savoury sandwiches too. Below are some traditional flavour combinations with some suggestions for accompanying chutneys from our Bumblee’s Preserves and The Borneo Pantry ranges.
